Delicious Proscuitto Wrapped, Pesto Stuffed Chicken

 

I’ve been making an attempt at Danielle Walker’s Against All Grain recipes and have had a lot of fun doing it. This weekend I made this chicken, Paleo biscuits, and a slow cooker pot roast. All have been Shane approved.

Before making this recipe, I had never actually gone out and bought Proscuitto for any other recipe. Now that I’ve tried it and loved it, I’m finding all these other things that Proscuitto goes really well with. Not only can you wrap it around chicken or beef, but fruit, too! Wrap it around peaches and put it on the grill. I found a recipe here: Proscuitto Wrapped Peaches.

I didn’t have the time to prepare the Pesto sauce myself or else I would have. I’ve seen some good recipes for pesto like this one here: Pesto Sauce. I actually used a jar Pesto sauce as shown below:

Proscuitto Wrapped, Pesto Stuffed Chicken was so easy it might just become my new go-to recipe. I had some for leftovers today at lunch, and its not bad reheated either. So this could be a great recipe to make ahead for your weeks lunches.
